MOGROG Rotisserie + Cafe

When Chef Alex Tolger isn’t busy running Kitchen Collab, you’ll find him driving around in “The Unimog Food Truck that Serves Tasty Rotisserie". MOGROG specializes in Central European cuisine, including Rotisserie Chicken and Dönner Kebab. In the winter you can visit MOGROG Cafe at Alpine Meadows Ski Resort located at the Achieve Tahoe Programs Center. In the summer, the food truck can be found at local community events. Chef Alex Tolger is available for both public and private events.

Michelle + Mary Sallah, Chefs/Food Truck Operators/Owners

Noisettes Mobile Kitchen

Noisettes Mobile Kitchen is owned and operated by the Sallah sisters, Mary and Michelle. Michelle is a chef who worked in restaurants and private homes in New York City and Los Angeles, CA, for almost 20 years until relocating to Grass Valley, CA in 2020. Mary was a pro snowboarder turned professional cook and small farm owner - she has been in and around Truckee, CA for more than a decade. The Sallah sisters are always inspired by working together - their creative energies blend to create wonderful menus inspired by the prolific agricultural community that surrounds them. Noisettes Mobile Kitchen is available for private and retail or pop up events, and can serve spectacular meals even in non-traditional event spaces.

Davis Smith, Baker/Somm/Owner

Raising Oxen

Davis Smith is the founder and owner of Raising Oxen. Trained as a sommelier, Davis has spent much of his career in the wine industry learning about how agriculture and climate affect grape vines and how these factors lead to the wine that ultimately ends up in your glass. He began baking bread as a hobby in his home kitchen and it soon became part of his weekly routine. As he applied his study habits and learned more he discovered that there are nearly as many varieties of wheat as there are grapes and that place and climate affect them both similarly. It is thanks to a small cohort of dedicated farmers – who have saved these seeds year after year – that we still have access to this diversity. Raising Oxen mills whole grain and whole wheat flours fresh to order and uses them as a vehicle to highlight these heroic acts of agricultural conservation and get people thinking more about this plant that has played such a huge part in sustaining humankind.

Chef Pablo is a certified German Master Baker with over 20 years of experience. Pablo is widely known for his commitment to high quality ingredients, attention to detail and stunningly beautiful presentation that somehow tastes even better than they look.

During the summer months, you can find Chef Pablo at the local farmers markets and other local events. In the winter, Pablo is focused on kneading dough, teaching bread baking and pizza making at the Artisan Baking Center, as well as other locations and pop ups throughout Northern California.
